Doggie Birthday Cake #2: Carob Cake with Peanut Butter Filling

CAKE:
1/2 cup unsalted butter, softened
1 cup honey
2-1/2 cups whole wheat flour
1/4 cup water
2 teaspoons baking powder
2/3 cup milk mixed with 1 teaspoon vinegar
1 cup sugar-free peanut butter
1 cup carob powder mixed with 1/2 cup water
1/2 teaspoon vanilla
2 eggs
 
ICING:
1 cup carob powder
1/4 cup honey
1 teaspoon vanilla
1/3 cup whole milk
 
Preheat oven to 350º.  In large bowl, mix together butter, honey, eggs, water, milk-vinegar mixture, and vanilla.  In a separate bowl, mix together carob powder-water mixture, flour, and baking powder.  Slowly mix the dry ingredients in with the wet ingredients, and mix well with a rotary beater.  Pour into two well-buttered pans, and bake for 25 minutes.  Allow to cool.
 
Spread one cup of sugar-free peanut butter on top of one of the cakes and then place the other cake on top of it, so that the peanut butter is the middle layer between the two cakes.
 
To make the carob icing, mix together the carob powder, honey, and vanilla.  Slowly add the milk while gently mixing to achieve "icing" consistency.  Cover with plastic wrap and refrigerate.
