Thanksgiving Muffins

INGREDIENTS:
2 cups whole wheat flour
2-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
4 teaspoons ground nutmeg
1/3 cup olive oil
2 large eggs
1-1/4 cups canned pumpkin puree (not pumpkin pie mix)
1/2 cup milk
1 cup coarsley chopped turkey breast
1-1/2 cups coarsely chopped cranberries (fresh or frozen)
DIRECTIONS:
Preheat oven to 400ºC.  Oil a twelve-muffin pan well.  Mix the flour, baking powder, cinnamon, and nutmeg.  Mix together the oil, eggs, pumpkin, and milk.  Combine wet and dry ingredients.  Fold in the turkey and the cranberries.  Fill the muffin tins and bake for 20-25 minutes.  Cool and serve.
